Roasted Radishes

INGREDIENTS

4 cups Fresh Picked Radishes

washed, quartered

2 Tbs Olive or Sunflower Oil

1 Tbs Fresh Rosemary, Thyme or Cilantro, Chopped

1 tsp Salt

1/2 Fresh Lemon juice to garnish

METHOD
STEP 1 ● Preheat oven to 190 C.
STEP 2 ● Wash and quarter radishes and place in a pot that has a well fitting lid.
STEP 3 ● Chop Fresh Rosemary or Thyme leaves and add to the pot with the radishes. Add oil and salt.
STEP 4 ● Place the lid on the pot and shake well. Everything should be well mixed together.
STEP 5 ● Pour onto a cookie sheet making sure to scrape the pot well with a spatula.
STEP 6 ● Place in oven and roast for 20-30 minutes.
STEP 7 ● Once Radishes are cooked, place in a serving bowl and garnish with freshly squeezed lemon juice.
