Cream of Pumpkin Soup

Pumpkin soup

INGREDIENTS

1 cup cashews

an substitute with 1 cup sunflower seeds or ½ cashews, ½ cup drained chick peas

4 cups plant-based milk or water

2 cups pureed pumpkin

1 tsp salt

1 tsp garlic powder

1 Tb onion powder

1 Tb chives

(opt)
METHOD
STEP 1 ● Blend cashews in 1-2 c milk until smooth.
STEP 2 ● Add pumpkin to blend again, briefly, until well mixed
STEP 3 ● Pour into a pan and add remaining ingredients, stirring until it comes to a boil
STEP 4 ● If thinner soup is desired, add less cashews
