Garlic Herb Patty Pan

INGREDIENTS

5 cups halved small pattypan squash

(about 500-600g)

1 tablespoon olive oil

2 garlic cloves, minced

2 tsp onion powder

½ tsp salt

¼ tsp dried oregano

¼ tsp dried thyme

1 Tb minced fresh parsley

METHOD
STEP 1 ● Preheat oven to 220°C. Place squash in a greased baking pan.
STEP 2 ● Mix oil, garlic, salt, onion powder, oregano and thyme; drizzle over squash.
STEP 3 ● Toss to coat. Roast until tender, 15-20 minutes, stirring occasionally.
STEP 4 ● Sprinkle with parsley
